COARA

COARA, being Lebanon’s first vegan restaurant, was launched by the couple Walid & Maysoon Nasreddine who decided to return to their home village Kfarkatra-Shouf in 1976 and adopt their grandparents’ traditional way of life. Their back to roots journey was enriched with homegrown organic vegetables, fruits, and herbs, of which Zaatar continues to be one of the main aromatic herbs used in most of the restaurant's traditional dishes. COARA, in its effort to preserve Lebanon’s traditional cuisines, has ensured the sustainability of its rural agriculture and created more than 6 job opportunities for rural women in the fields of agriculture and food processing.
